Check out this recipe for a delicious meal in less than 30 minutes:
Chinese 
Lemon Chicken
This easy put together recipe is great for those who are hard working individuals and don’t have much time to get dinner ready. Serve with steamed rice and your family will think you were slaving in the kitchen all day.

Ingredients
1 tbsp oil
3-4 boneless skinless chicken breasts cut into strips
2 cups snow peas, trimmed
1 medium onion, sliced
1 small red pepper, cut into strips
1pkg (85g) Jello Lemon flavor
1 tbsp cornstarch
1/2 cup reduced-sodium chicken broth
2 tbsp zesty Italian dressing
2 cloves garlic, minced
Text Box: Putting it all together:
Heat oil in large skillet on medium high heat. Add chicken, cook until through, stirring occasionally. Add snow peas, onion, and peppers and garlic. Cook and stir 2 min. Mix dry jelly powder and cornstarch in small bowl. Add broth, dressing, and garlic; stir until jelly powder is dissolved. Add to skillet. Reduce heat to medium, cook 3 mins or until sauce is thickened, stirring

frequently. If not thick enough, add a bit more cornstarch mixed with equal amounts of water.

Wow what a year this has been at CJAY. There have been many changes and challenges that we have overcome and conquered.
First exciting change happened last summer when the outside of the CJAY building underwent a face lift by way of a new paint job. The new color has rejuvenated the Centre and staff from the outside in.
We have enhanced our Nutshimit supplies and expanded our space by building a new shed to house our new supplies.
Our next order of business for the upcoming summer is to build a new basketball court and move our volleyball/badminton net to the lower level of our property  next to the new basketball court.


Text Box: We are hoping to create an activities area in the lower level of our property.
During the course of this year we are aiming to have a new piece built onto our existing cabin, bringing the total square footage of our cabin to 1,248. But that’s not all we have planned for our 

Text Box: cabin. We will be clearing land behind our cabin to allow a clear path to the lake, for canoeing and swimming. 
Over the past year we have 
been working on expanding and building on our 
existing Centre menu to include a variety of traditional 
aboriginal meals, such as caribou. CJAY is committed to providing healthy food choices to our clients to

With all the past changes and upcoming changes, one can only say, “The future looks bright at CJAY.”

* Choose cooking methods that require little or no added fat such as roasting, boiling, baking, grilling, steaming,  and poaching

* Service whole grain products more often than refined grains every day.

* Serve water or milk at the table instead of sugar drinks

* Serve green salads but put the dressing on the side

* Have fish at least 2 times per week

* Use smaller size plates, bowls, cups and glasses to each within a healthy amount

* Select lean meat, wild game and alternatives prepared with little or no added fat, sugar or salt
